Creamy, fruity, and irresistibly sweet, these blueberry cream cheese bars combine a tender crust with a rich cream cheese filling topped with fresh blueberries.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, cold
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine flour and powdered sugar. Cut in cold butter until crumbly. Press into the bottom of the prepared dish.
  3. Bake crust for 15 minutes. Remove and set aside.
  4. In a mixing bowl, beat cream cheese, granulated sugar, and vanilla until smooth. Spread over the cooled crust.
  5. Top with fresh blueberries evenly over the cream cheese layer.
  6. Bake for an additional 20 minutes until the edges are golden and the filling is set.
  7. Allow to cool completely, then refrigerate for at least 2 hours before slicing and serving.

Notes

  • Use fresh blueberries for best flavor. Frozen can be used but thaw and drain excess moisture.
  • Chill the bars thoroughly for clean cuts.
