Instructions
- Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. In a larger bowl, cream the softened butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla extract. Gradually add the dry ingredients to form a soft dough.
- Mix brown sugar and ground cinnamon to create the cinnamon swirl mixture. Divide the dough into two equal parts. Roll each into a rectangle on a floured surface. Spread the cinnamon mixture evenly over each rectangle.
- Carefully roll each rectangle into a tight spiral to form a cinnamon swirl. Slice into ½-inch thick cookies and place on a parchment-lined baking sheet. Bake for 12-15 minutes or until golden brown. Let cool slightly before optionally drizzling with icing glaze.
