Ingredients
Scale
- 1 lb boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 2 tablespoons sriracha sauce
- 1/4 cup mayonnaise or Greek yogurt
- 1 tablespoon soy sauce
- 1 teaspoon honey or maple syrup
- 1 cup cooked rice or cauliflower rice
- Fresh vegetables (cucumber, carrots, bell peppers)
- Sesame seeds and chopped green onions for garnish
- Optional spicy toppings or extra sriracha for heat
Instructions
- Slice the chicken into strips or bite-sized pieces. In a bowl, combine olive oil, soy sauce, and sriracha. Marinate the chicken for at least 15 minutes.
- Heat a skillet over medium heat and cook the marinated chicken until golden brown and cooked through, about 7-10 minutes. Alternatively, use an air fryer for crispiness.
- Mix mayonnaise or Greek yogurt with sriracha, honey, and soy sauce for the spicy sauce. Adjust heat as desired.
- Arrange cooked rice or cauliflower rice in bowls. Top with the cooked chicken, sliced vegetables, sesame seeds, and green onions.
- Drizzle the spicy sauce over everything. Serve immediately and enjoy your flavorful chicken bowl.
Notes
- Marinate the chicken for at least 15 minutes for maximum flavor.
- Use chicken thighs for juicier, more tender meat if preferred.
- Reheat leftovers in the microwave or oven before serving.
- Customize with additional toppings like shredded nori or roasted peanuts.
