- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 2 tablespoons apricot jam (optional glaze)
Instructions
- Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
- In a bowl, combine flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press into the bottom of the prepared pan.
- Bake for 15 minutes until lightly golden. Allow to cool slightly.
- In a mixing bowl, beat softened cream cheese, granulated sugar, and vanilla until smooth.
- Spread the cream cheese mixture evenly over the cooled crust.
- Top with blueberries and gently press them into the filling.
- Optional: Warm apricot jam and brush over blueberries for a glossy finish.
- Bake for an additional 25-30 minutes until the filling is set.
- Remove from oven, let cool, then refrigerate for at least 2 hours before serving.
