Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 25 minutes or until crispy.
- In a large bowl, combine roasted potatoes, smoked sausage slices, ranch dressing, and half of the cheese.
- Transfer mixture to a baking dish, top with remaining cheese, and bake for 10-15 minutes until bubbly.
- Garnish with fresh parsley before serving.
