- 1 pound Italian sausage
- 1 small onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 9 oz cheese tortellini
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil and Parmesan for garnish
Instructions
- In a large pot, cook sausage until browned. Add chopped onion and garlic, sauté until fragrant.
- Pour in chicken broth and diced tomatoes, bring to a boil.
- Add carrots, celery, Italian seasoning, salt, and pepper. Reduce heat and simmer 15 minutes.
- Stir in tortellini and cook until tender, about 5 minutes.
- Serve hot, garnished with fresh basil and grated Parmesan.
Notes
- Feel free to add spinach or kale for extra greens.
- Use store-bought sausage for convenience.
