- 1 pound Italian sausage, sliced
- 1 package (9 oz) cheese tortellini
- 4 cups chicken broth
- 1 cup diced butternut squash or pumpkin
- 1 cup chopped kale or spinach
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese and fresh herbs for garnish
Instructions
- Sauté sliced sausage in a large pot over medium heat until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant.
- Add diced butternut squash, thyme, salt, and pepper. Cook for 5 minutes.
- Pour in chicken broth, bring to a boil, then reduce to simmer till squash softens, about 10 minutes.
- Add tortellini and cooked sausage, simmer until tortellini floats, about 5 minutes.
- Stir in kale or spinach until wilted. Adjust seasoning as needed.
- Serve hot, topped with Parmesan cheese and fresh herbs.
Notes
- You can substitute kale with spinach or other leafy greens.
- For a creamier texture, add a splash of heavy cream before serving.
