Ingredients

  • 1 pound Italian sausage, sliced
  • 1 package (9 oz) cheese tortellini
  • 4 cups chicken broth
  • 1 cup diced butternut squash or pumpkin
  • 1 cup chopped kale or spinach
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Grated Parmesan cheese and fresh herbs for garnish

Instructions

  1. Sauté sliced sausage in a large pot over medium heat until browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant.
  3. Add diced butternut squash, thyme, salt, and pepper. Cook for 5 minutes.
  4. Pour in chicken broth, bring to a boil, then reduce to simmer till squash softens, about 10 minutes.
  5. Add tortellini and cooked sausage, simmer until tortellini floats, about 5 minutes.
  6. Stir in kale or spinach until wilted. Adjust seasoning as needed.
  7. Serve hot, topped with Parmesan cheese and fresh herbs.
