- 4 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 package (16 oz) potato gnocchi
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Cook chopped bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, add diced onion and minced garlic; sauté until translucent.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook until tender, about 3-4 minutes.
- Reduce heat to low, stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Season with salt and pepper. Top with cooked bacon and sliced green onions before serving.
Notes
- For extra flavor, add a pinch of smoked paprika or hot sauce.
- Use gluten-free gnocchi for a gluten-free version.
