Instructions
- Cook bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the bacon fat, sauté onions and garlic until translucent.
- Add broth and bring to a simmer.
- Stir in heavy cream, cooked gnocchi, and shredded cheddar cheese until cheese melts and soup is smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with crispy bacon and fresh parsley.
