- 2 cups shredded cheddar cheese
- 2 cups chicken or vegetable broth
- 1 cup milk
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions

- Stir in garlic and cook for 1 minute.
- Add orzo, broth, and milk; bring to a boil.
- Reduce heat, cover, and simmer for 8-10 minutes until orzo is tender.
- Add broccoli and cook for an additional 3-4 minutes.
- Stir in shredded cheddar cheese until melted and creamy.

Notes
- For a vegan version, substitute cheese with plant-based cheese and use vegetable broth.
- Ensure to stir frequently to prevent cheese from sticking and to keep sauce creamy.
