  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 2 chicken breasts, sliced
  • 12 oz (340 g) pasta (penne or fettuccine)
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken slices with Cajun seasoning, salt, and pepper.
  3. Add chicken to the skillet; cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, sauté garlic and red bell pepper until fragrant and slightly softened.
  5. Pour in chicken broth and heavy cream; bring to a simmer.
  6. Return cooked chicken to the skillet, stir well to coat in the sauce, and cook for another 2-3 minutes.
  7. Add cooked pasta, toss to combine, and heat through.
  8. Garnish with chopped parsley before serving.

Notes

  • Adjust the spice level by adding more Cajun seasoning if desired.
  • You can substitute heavy cream with Greek yogurt for a lighter version.
  • Serve with a side of garlic bread for a complete meal.
