- 2 chicken breasts, sliced
- 12 oz (340 g) pasta (penne or fettuccine)
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Season chicken slices with Cajun seasoning, salt, and pepper.
- Add chicken to the skillet; cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté garlic and red bell pepper until fragrant and slightly softened.
- Pour in chicken broth and heavy cream; bring to a simmer.
- Return cooked chicken to the skillet, stir well to coat in the sauce, and cook for another 2-3 minutes.
- Add cooked pasta, toss to combine, and heat through.
- Garnish with chopped parsley before serving.
Notes
- Adjust the spice level by adding more Cajun seasoning if desired.
- You can substitute heavy cream with Greek yogurt for a lighter version.
- Serve with a side of garlic bread for a complete meal.
