- 2 tablespoons olive oil
- 3 cups fresh spinach
- 1 cup shredded Parmesan cheese
- 1 cup heavy cream
- 3 garlic cloves, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
- Add heavy cream to the skillet, bring to simmer, then stir in Parmesan cheese until melted and smooth.
- Add fresh spinach to the sauce and cook until wilted, about 2-3 minutes.
- Return chicken to the skillet, spoon sauce over, and cook for another 2 minutes to combine flavors.
- Serve hot, garnished with additional Parmesan and fresh herbs if desired.
Notes
- You can substitute heavy cream with half-and-half for a lighter version.
- Ensure the chicken is evenly pounded for uniform cooking.
- Perfect with pasta or a side of steamed vegetables.
