A deliciously creamy chicken gnocchi soup packed with tender gnocchi, shredded chicken, fresh spinach, and melted cheese, perfect for a comforting meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups cooked shredded chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for 1 minute more.
  3. Pour in chicken broth and bring to a boil.
  4. Add cooked shredded chicken and gnocchi, cook according to package instructions, about 3-4 minutes.
  5. Reduce heat and stir in heavy cream, spinach, and mozzarella cheese. Cook until spinach wilts and cheese melts.
  6. Season with salt and pepper to taste. Serve hot garnished with fresh herbs if desired.

Notes

  • Use fresh spinach for best flavor. You can substitute milk for heavy cream for a lighter version.
  • Gnocchi can be stored separately and added just before serving if preparing in advance.
