- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups cooked shredded chicken
- 4 cups chicken broth
- 1 cup heavy cream
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
- Add minced garlic and cook for 1 minute more.
- Pour in chicken broth and bring to a boil.
- Add cooked shredded chicken and gnocchi, cook according to package instructions, about 3-4 minutes.
- Reduce heat and stir in heavy cream, spinach, and mozzarella cheese. Cook until spinach wilts and cheese melts.
- Season with salt and pepper to taste. Serve hot garnished with fresh herbs if desired.
Notes
- Use fresh spinach for best flavor. You can substitute milk for heavy cream for a lighter version.
- Gnocchi can be stored separately and added just before serving if preparing in advance.
