- 1.5 pounds beef stew meat, cut into chunks
- 1 can (13.5 oz) coconut milk
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 tablespoon ginger, grated
- 2 tablespoons oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a skillet and brown the beef chunks until seared. Transfer to slow cooker.
- Sauté onions and garlic until translucent, then add curry powder, turmeric, cumin, and ginger. Cook for 2 minutes.
- Add sautéed spices and onion mixture to the slow cooker with beef.
- Pour in coconut milk, season with salt and pepper, and stir well.
- Cover and cook on low for 6-8 hours until beef is tender.
- Garnish with fresh cilantro before serving.

- You can add vegetables like bell peppers or potatoes for variety.
- Serve over steamed rice or with naan bread.
