- 1.5 lbs beef stew meat, cut into chunks
- 1 can (13.5 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 tablespoon olive oil
- 2 carrots, sliced
- 1 red bell pepper, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet and brown the beef chunks until all sides are seared. Transfer to slow cooker.
- In the same skillet, sauté onions and garlic until fragrant, then add curry powder and turmeric, cooking for another minute.
- Pour the sautéed mixture over the beef in the slow cooker.
- Add coconut milk, carrots, bell pepper, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours until beef is tender.
- Garnish with fresh cilantro before serving. Serve over rice or with warm bread.
Notes
- Adjust spice levels by adding more curry powder or chili flakes if desired.
- You can substitute chicken or seafood for beef.
