Ingredients

  • 1.5 lbs beef stew meat, cut into chunks
  • 1 can (13.5 oz) coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 tablespoon olive oil
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet and brown the beef chunks until all sides are seared. Transfer to slow cooker.
  2. In the same skillet, sauté onions and garlic until fragrant, then add curry powder and turmeric, cooking for another minute.
  3. Pour the sautéed mixture over the beef in the slow cooker.
  4. Add coconut milk, carrots, bell pepper, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 6-8 hours until beef is tender.
  6. Garnish with fresh cilantro before serving. Serve over rice or with warm bread.
