- 1 lb (450g) boneless, skinless chicken breasts, cut into pieces
- 1 (9 oz) package of cheese tortellini
- 2 cups of chicken broth
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- 1 cup of chopped spinach (optional)
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Place chicken pieces, garlic, Italian seasoning, salt, and pepper in the crockpot. Add chicken broth and cook on low for 4 hours until chicken is cooked through.
- Shred the cooked chicken in the crockpot. Add heavy cream, Parmesan, spinach (if using), and tortellini. Cover and cook on high for 20 minutes until pasta is tender.
- Garnish with fresh basil or parsley before serving and enjoy a creamy, hearty meal.
