- 2 cups sliced mushrooms
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups vegetable broth
- 2 cups fresh spinach
- 2 tablespoons butter

- Grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced mushrooms and sauté until golden brown, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add orzo to the skillet and toast for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until orzo is cooked and liquid is absorbed, about 10 minutes.
- Stir in butter, spinach, salt, and pepper. Cook until spinach is wilted.
- Serve hot, garnished with Parmesan cheese if desired.

- You can add cooked chicken or shrimp for extra protein.
