- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 8 small flour or corn tortillas
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro and sliced jalapenos for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic; cook until translucent.
- Add ground beef, cumin, chili powder, salt, and pepper. Cook until browned and cooked through.
- Spread a thin layer of enchilada sauce in a baking dish.
- Fill each tortilla with the beef mixture and a sprinkle of cheese. Roll up and place seam side down in the dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with shredded cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Garnish with chopped cilantro and sliced jalapenos before serving.
