  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (14. oz) diced tomatoes
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart with a spatula.
  2. Add chopped onion and minced garlic; cook until onion becomes translucent.
  3. Pour in chicken broth and diced tomatoes, bring to a boil.
  4. Add gnocchi to the boiling soup and cook according to package instructions, about 3-4 minutes.
  5. Stir in fresh spinach and heavy cream, simmer for another 5 minutes.
  6. Season with salt and pepper, adjust to taste, and serve hot garnished with herbs if desired.
