- 1 pound Italian sausage, casings removed
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 can (14. oz) diced tomatoes
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart with a spatula.
- Add chopped onion and minced garlic; cook until onion becomes translucent.
- Pour in chicken broth and diced tomatoes, bring to a boil.
- Add gnocchi to the boiling soup and cook according to package instructions, about 3-4 minutes.
- Stir in fresh spinach and heavy cream, simmer for another 5 minutes.
- Season with salt and pepper, adjust to taste, and serve hot garnished with herbs if desired.
Notes
- For extra flavor, add red pepper flakes or grated Parmesan cheese.
- Use fresh gnocchi for the best texture.
