- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups cooked chicken, shredded or diced
- 4 cups chicken broth
- 1 cup whole milk or heavy cream
- 1 package gnocchi (about 16 oz)
- 2 cups fresh spinach leaves
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until translucent.
- Add cooked chicken and stir for 2 minutes.
- Pour in chicken broth and bring to a simmer.
- Add gnocchi and cook according to package instructions, about 3-4 minutes.
- Stir in milk or heavy cream, Italian seasoning, salt, and pepper. Simmer for another 5 minutes.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Adjust seasoning as needed and serve hot garnished with herbs if desired.
Notes
- You can use rotisserie chicken for quick prep.
- Gnocchi can be purchased fresh or frozen; cook accordingly.
- For a dairy-free version, substitute almond milk or coconut cream.
