- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 package (16 ounces) gnocchi
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until tender.
- Add chicken broth and bring to a boil. Reduce heat and stir in shredded chicken and gnocchi.
- Cook until gnocchi float to the surface, about 3-4 minutes.
- Stir in heavy cream and chopped spinach. Cook for another 2-3 minutes until heated through.
- Season with salt and pepper. Serve hot garnished with fresh herbs if desired.
Notes
- You can substitute chicken with turkey or vegetarian options like tofu for a different twist.
- For a thicker soup, add a little flour or cornstarch slurry during cooking.
