- 1 pound Italian sausage links, casings removed
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spoon.
- Add chopped onion, garlic, carrots, and celery. Sauté until vegetables are tender.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and Parmesan cheese until cheese melts and soup is creamy.
- Add chopped spinach and cook for another 2 minutes until wilted.
- Season with salt and pepper. Serve hot, garnished with fresh parsley and extra Parmesan if desired.
Notes
- For a spicier version, add red pepper flakes during sautéing.
- You can substitute ground beef or turkey for sausage.
- Use fresh Parmesan for the best flavor.
