- 8 oz spaghetti or your favorite pasta
- 2 cups fresh spinach leaves
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 cup heavy cream
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- Heat olive oil in a skillet over medium heat. Add sliced mushrooms and cook until golden brown, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in heavy cream and bring to a simmer. Allow it to thicken slightly, about 2-3 minutes.
- Add the cooked pasta and spinach leaves to the skillet. Toss until spinach wilts and everything is coated in the sauce.
- Stir in grated parmesan cheese until melted and creamy. Season with salt and black pepper to taste.
- Serve hot, garnished with additional parmesan if desired.
Notes
- If the sauce is too thick, add a splash of pasta water to loosen it.
- You can add red pepper flakes for a spicy kick.
- This dish pairs well with crusty bread or a light salad.
