A quick and delicious creamy pasta dish featuring sautéed mushrooms, fresh spinach, and parmesan cheese, perfect for weeknight dinners or cozy lunches.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 8 oz spaghetti or your favorite pasta
  • 2 cups fresh spinach leaves
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add sliced mushrooms and cook until golden brown, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Pour in heavy cream and bring to a simmer. Allow it to thicken slightly, about 2-3 minutes.
  5. Add the cooked pasta and spinach leaves to the skillet. Toss until spinach wilts and everything is coated in the sauce.
  6. Stir in grated parmesan cheese until melted and creamy. Season with salt and black pepper to taste.
  7. Serve hot, garnished with additional parmesan if desired.

Notes

  • If the sauce is too thick, add a splash of pasta water to loosen it.
  • You can add red pepper flakes for a spicy kick.
  • This dish pairs well with crusty bread or a light salad.
