- 4 large potatoes, diced
- 1 lb smoked sausage, sliced
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Roast on a baking sheet for 25-30 minutes until crispy.
- Meanwhile, cook sliced sausage in a skillet until browned.
- In a large bowl, combine ranch dressing, shredded cheese, and a little bit of seasoning. Mix well.
- Add roasted potatoes and cooked sausage to the bowl, then toss to coat in the ranch cheese sauce.
- Transfer everything to a baking dish, sprinkle with additional cheese and chopped parsley, and bake for another 10 minutes until bubbly and golden.
