  • 4 large bell peppers (red, yellow, or green)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped fresh spinach
  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds and membranes.
  3. In a bowl, mix ricotta, Parmesan, spinach, garlic, olive oil, oregano, salt, and pepper.
