Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until they soften slightly, about 2 minutes.
- Stir in heavy cream and bring to a gentle simmer.
- Add cooked pasta, chopped spinach, and Parmesan cheese. Toss well to coat everything evenly.
- Season with salt and pepper to taste. Garnish with fresh basil before serving.
Notes
- Feel free to add crushed red pepper flakes for a spicy kick.
- For a vegan option, substitute heavy cream with coconut milk or cashew cream and skip Parmesan cheese.
