- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt, pepper, and Italian seasoning, then sear until golden brown, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add garlic and sun-dried tomatoes; sauté for 2 minutes.
- Pour in heavy cream and bring to a simmer, then stir in Parmesan cheese until melted and sauce thickens.
- Add spinach and cook until wilted, about 2 minutes.
- Return chicken to skillet, spoon sauce over, and cook for an additional 2-3 minutes until heated through.

- For a lighter version, substitute half-and-half for heavy cream.
