- 2 cans white beans, drained and rinsed
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 can crushed tomatoes (14 oz)
- 1 cup vegetable broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil and parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more.
- Add crushed tomatoes, vegetable broth, smoked paprika, and oregano. Simmer for 10 minutes.
- Mix in the white beans and cook for an additional 10 minutes until heated through.
- Season with salt and pepper to taste.
- Garnish with chopped fresh basil and parsley before serving.
Notes
- You can use dried beans; soak and cook them beforehand for best results.
- Adjust the seasoning according to your taste.
- Serve with crusty bread or over rice for a complete meal.
