Instructions
- In a large bowl, combine the cooled mashed potatoes, shredded cheddar, Parmesan cheese, chopped chives, garlic powder, salt, and pepper. Mix thoroughly until well combined.
- Take small portions of the mixture and roll into balls about the size of a golf ball. Flatten slightly to form small discs for even cooking and crispiness.
- Set up breading stations with three bowls: one with beaten eggs, one with flour, and one with panko breadcrumbs. Dip each potato puff first in flour, then into beaten eggs, and finally coat generously with panko breadcrumbs.
- Preheat the air fryer to 400°F (200°C). Lightly spray the puffs with cooking spray or olive oil spray. Arrange them in a single layer in the air fryer basket, ensuring they do not touch.
- Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy. Serve hot with your favorite dips.
