- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup sour cream
- 1 cup packed brown sugar
- 2 teaspoons vanilla extract
- 1 cup butterscotch chips
- 1/2 cup heavy cream
- 1/2 cup chopped nuts (pecans or walnuts)
- Additional caramel sauce for topping
Instructions
- Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes.
- In a large bowl, beat cream cheese until smooth. Add sour cream, brown sugar, and vanilla; mix well.
- Melt butterscotch chips with heavy cream over low heat, stirring constantly. Mix half into the cheese batter and swirl the rest on top.
- Pour filling over crust and bake for 55-60 minutes, until the center is set. Let cool.
- Top with caramel sauce and chopped nuts. Refrigerate at least 4 hours before serving.
