Instructions

  1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan. Bake for 10 minutes.
  2. In a large bowl, beat cream cheese until smooth. Add sour cream, brown sugar, and vanilla; mix well.
  3. Melt butterscotch chips with heavy cream over low heat, stirring constantly. Mix half into the cheese batter and swirl the rest on top.
  4. Pour filling over crust and bake for 55-60 minutes, until the center is set. Let cool.
