Instructions
- Start by peeling and deveining the shrimp if necessary. Chop the spinach, mince the garlic, and gather all ingredients to streamline the cooking process.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and sprinkle with salt, pepper, and Italian seasoning. Cook for about 2-3 minutes on each side until pink and opaque, then remove from the pan and set aside. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
- Meanwhile, bring a large pot of salted water to a boil. Cook the tortellini according to package instructions, usually about 3-4 minutes for fresh or frozen varieties. Drain and add to the skillet with the garlic and shrimp.
- Pour the heavy cream into the skillet with the tortellini and shrimp. Stir in grated Parmesan cheese and cook on low heat for 2-3 minutes until the sauce thickens slightly. Add the chopped spinach and cook until wilted, about 1-2 minutes.
- Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley and serve hot. For an added burst of flavor, sprinkle extra Parmesan on top. Pair with white wine or a light salad for a complete gourmet meal.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on stovetop or microwave, adding a splash of cream or broth if needed.
- For gluten-free variation, use gluten-free tortellini or zucchini noodles.
