  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 3 cups chopped peeled apples
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup salted caramel sauce
  • ½ cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes.
  2. In a bowl, toss chopped apples with cinnamon and nutmeg. Set aside.
  3. Beat softened cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Mix until combined.
  4. Fold in sour cream and half of the caramel sauce into the cream cheese mixture.
  5. Pour half of the batter over the crust. Add a layer of apple filling. Top with remaining batter and apples.
  6. Drizzle remaining caramel sauce on top. Bake for 50-60 minutes or until the center is set.
  7. Cool completely, then refrigerate for at least 4 hours before serving. Decorate with extra caramel and apple slices if desired.
