Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- Mix the cinnamon and sugar for coating in a small bowl and set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, then vanilla, mixing well after each addition.
- In a separate bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
- Gradually add dry ingredients to wet ingredients, mixing just until combined.
- Fold in chopped apples.
- Shape dough into 1.5-inch balls and roll each in cinnamon sugar mixture.
- Place on prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes or until edges are golden.
- Let cookies cool on wire racks before serving.
