- 2 cups cooked rice
- 1 pound cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- Optional toppings: sour cream, sliced jalapenos, diced tomatoes
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine rice, shredded chicken, black beans, corn, and taco seasoning.
- Spread half of the mixture into a greased baking dish.
- Top with half of the cheese and salsa.
- Repeat layers with remaining mixture, cheese, and salsa.
- Bake uncovered for 20-25 minutes until bubbly and cheese is melted.
- Garnish with chopped cilantro and optional toppings before serving.
Notes
- You can customize this casserole with your favorite toppings like sliced olives or red onion.
- For a spicy kick, add some sliced jalapenos or hot sauce.
