Made with fresh lemon zest, juicy blueberries, and wholesome ingredients, this lemon yogurt cake offers a delightful combination of citrus tartness and natural sweetness.

  • Total Time: 1 hour 5 minutes – 1 hour 15 minutes
  • Yield: 1 loaf (8 servings)

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup plain or Greek yogurt
  • ¼ cup vegetable oil or melted butter
  • 2 large eggs
  • Juice and zest of 1 large lemon
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (or frozen, thawed)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, combine sugar, yogurt, oil, eggs, lemon juice, lemon zest, and vanilla extract. Whisk until smooth.
  4. Gradually add the wet ingredients to the dry, stirring gently until just combined. Do not overmix.
  5. Gently fold in the blueberries, ensuring even distribution.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use fresh blueberries for best flavor; thaw and drain frozen blueberries before adding.
  • Adjust sweetness by varying the sugar amount to your taste.
  • Optionally top with lemon glaze or additional lemon zest before baking for extra citrus flavor.
  • Ensure all ingredients are at room temperature for even mixing and optimal baking results.
