Instructions

- In a separate bowl, combine sugar, yogurt, oil, eggs, lemon juice, lemon zest, and vanilla extract. Whisk until smooth.
- Gradually add the wet ingredients to the dry, stirring gently until just combined. Do not overmix.
- Gently fold in the blueberries, ensuring even distribution.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
