- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups spinach, chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook orzo in salted boiling water until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until translucent.
- Add cherry tomatoes and cook until they soften, about 2-3 minutes.
- Stir in cooked orzo and chopped spinach; cook until spinach wilts.
- Remove from heat and stir in Parmesan cheese. Season with salt and pepper.
- Garnish with fresh basil and serve warm.
Notes
- You can add grilled chicken or shrimp for extra protein.
- Adjust the seasoning to taste with additional herbs or spices.
