  • Total Time: 1 hour 55 minutes
  • Yield: 8 buns

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1/2 teaspoon salt
  • 3/4 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup fresh or frozen wild blueberries
  • 1 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)

Instructions

  1. In a small bowl, dissolve the yeast in warm milk and let sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour, sugar, and salt. Add the yeast mixture, melted butter, eggs, and vanilla extract. Mix well.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Cover and let rise in a warm place for 1 hour or until doubled in size.
  4. Prepare the filling by mixing ricotta cheese with vanilla extract. Gently fold in blueberries.
  5. Divide the risen dough into 8 equal portions. Flatten each and place a spoonful of filling in the center. Seal and shape into balls or buns.
  6. Place the buns on a parchment-lined baking sheet, spaced apart.
  7. Preheat oven to 375°F (190°C). Bake for 20-25 minutes until golden brown.
  8. Let cool slightly, then dust with powdered sugar if desired. Serve warm or at room temperature.

Notes

  • Thaw frozen blueberries before mixing into the filling to prevent sogginess.
  • For a richer flavor, use mascarpone instead of ricotta.
  • Serve with honey, sour cream, or fresh berries for added flavor.
