Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium heat. Sear the chicken for 6-7 minutes on each side until cooked through. Remove and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes.
- Pour in heavy cream and simmer gently. Stir in Parmesan cheese until melted and smooth. Add lemon juice if desired and season with salt and pepper.
- Return the chicken to the skillet, spoon sauce over, cover, and simmer for 5 minutes to meld flavors. Serve hot.
