- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup Greek yogurt
- 1 cucumber, grated
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 teaspoons dried dill
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a baking dish, combine rice, chicken broth, olive oil, garlic, dill, salt, and pepper. Stir well.
- Place chicken breasts on top of rice mixture.
- Cover with foil and bake for 35-40 minutes, until chicken is cooked through.
- Meanwhile, prepare tzatziki sauce by mixing Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and chopped dill.
- Serve baked chicken and rice with generous dollops of tzatziki sauce and fresh herbs.
Notes
- Feel free to add cherry tomatoes or olives for extra flavor.
- Use jasmine or basmati rice for a different aroma.
