- 4 large bell peppers, sliced (preferably red, green, or yellow)
- 1 cup shredded provolone or mozzarella cheese
- 1 small onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: Worcestershire sauce or your favorite keto-friendly seasonings
Instructions
- Thinly slice the steak and season it with salt, pepper, and optional seasonings like Worcestershire sauce. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sauté the beef until browned and cooked through. Set aside.
- In the same skillet, add the remaining olive oil. Sauté sliced onions and garlic until fragrant and caramelized, about 3-4 minutes. Stir in the sliced bell peppers and cook until tender. Remove from heat.
- Lay out the sliced bell peppers on a work surface. Place a portion of cooked beef on each pepper slice, top with shredded cheese, and roll tightly. Secure with toothpicks if necessary.
- Preheat your oven to 375°F (190°C). Place the rolls on a baking sheet lined with parchment paper and bake for 10-15 minutes until cheese is melted and bubbly. Alternatively, pan-fry the rolls in a skillet for about 5 minutes on each side for a crispy finish.
