  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 lb (450g) sirloin or ribeye steak, thinly sliced
  • 4 large bell peppers, sliced (preferably red, green, or yellow)
  • 1 cup shredded provolone or mozzarella cheese
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: Worcestershire sauce or your favorite keto-friendly seasonings

Instructions

  1. Thinly slice the steak and season it with salt, pepper, and optional seasonings like Worcestershire sauce. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sauté the beef until browned and cooked through. Set aside.
  2. In the same skillet, add the remaining olive oil. Sauté sliced onions and garlic until fragrant and caramelized, about 3-4 minutes. Stir in the sliced bell peppers and cook until tender. Remove from heat.
  3. Lay out the sliced bell peppers on a work surface. Place a portion of cooked beef on each pepper slice, top with shredded cheese, and roll tightly. Secure with toothpicks if necessary.
  4. Preheat your oven to 375°F (190°C). Place the rolls on a baking sheet lined with parchment paper and bake for 10-15 minutes until cheese is melted and bubbly. Alternatively, pan-fry the rolls in a skillet for about 5 minutes on each side for a crispy finish.

Notes

  • Feel free to customize with keto-friendly toppings like sautéed mushrooms or jalapeños for added flavor.
  • Pre-cooking the beef can speed up assembly on busy days.
  • Using thin-sliced beef ensures faster cooking and authentic texture.
  • Experiment with different cheeses such as provolone, mozzarella, or cheddar for varied flavors.
