- 4 large bell peppers (red, yellow, green)
- 1 lb ground beef or turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup chopped tomatoes
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add ground meat, chopped onion, and garlic. Cook until meat is browned and onion is translucent.
- Add taco seasoning, salt, and pepper. Stir to combine and cook for another 2 minutes.
- Fill each pepper with the meat mixture, pressing gently.
- Place stuffed peppers in a baking dish and top each with shredded cheese.
- Bake in the preheated oven for 20-25 minutes until peppers are tender and cheese is melted.
- Garnish with chopped tomatoes and cilantro before serving.
Notes
- You can substitute ground beef with turkey or plant-based meat for a healthier option.
- For a spicier flavor, add sliced jalapeños to the filling.
- Serve with sour cream or salsa for extra flavor.
