- 2 cups cooked orzo pasta
- 1 lb boneless chicken breasts, diced
- 2 large onions, sliced
- 2 tablespoons olive oil
- 2 cups shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 15 minutes. Remove and set aside.
- In the same skillet, cook diced chicken until browned and cooked through. Season with garlic powder, thyme, salt, and pepper.
- In a large mixing bowl, combine cooked orzo, chicken, onions, and half of the shredded cheese.
- Transfer mixture to a baking dish, top with remaining cheese, and bake for 20-25 minutes until bubbly and golden brown.
- Garnish with chopped parsley before serving.
Notes
- You can substitute chicken with turkey or plant-based protein for variation.
- For extra flavor, add a splash of balsamic vinegar to the onions during caramelization.
- This casserole pairs well with a fresh green salad.
