- 4 salmon fillets
- 2 ripe mangoes, diced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and minced
- Juice of 1 lime
- 2 tablespoons fresh cilantro, chopped

Instructions
- Preheat grill or oven to 375°F (190°C).
- Season salmon fillets with salt and pepper.
- Grill or bake salmon until cooked through, about 12-15 minutes.
- Meanwhile, in a bowl, combine mangoes, red bell pepper, onion, jalapeño, lime juice, cilantro, salt, and pepper to make the salsa.
- Once salmon is ready, top with fresh mango salsa.
- Serve immediately with lime wedges and extra cilantro if desired.

- You can serve this dish with a side of rice or greens for a complete meal.
- For an extra layer of flavor, add a touch of honey or balsamic vinegar to the salsa.
