Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray. Grate fresh zucchini and lightly squeeze out excess moisture. Set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon if using.
- In a large bowl, beat the eggs, then add the sugar, vegetable oil, and vanilla extract. Mix until smooth. Fold in the grated zucchini.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Fold in nuts or chocolate chips if desired.
- Pour the batter into your prepared loaf pan. Bake for 55-60 minutes until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
