Instructions
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, onion, egg, parsley, salt, and pepper. Mix until well incorporated.
- Transfer the mixture into the prepared loaf pan, shaping it into a loaf shape.
- Top with shredded mozzarella cheese evenly over the meatloaf.
- Bake for 45-50 minutes or until cooked through and the cheese is bubbly and golden.
- Let rest for 10 minutes before slicing. Serve hot with your favorite sides.
