Instructions
- Start by heating the water, butter, sugar, and salt in a saucepan over medium heat until it boils.
- Add the flour all at once and stir vigorously until a dough forms and pulls away from the sides of the pan. Remove from heat and let it cool slightly.
- Beat the eggs and vanilla extract into the warm dough one at a time, mixing thoroughly after each addition until smooth and slightly sticky.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Fill a piping bag fitted with a star tip with the churro dough and pipe 3-4 inch strips onto the baking sheet.
- Bake for 15-20 minutes, turning halfway through, until golden brown. Let cool slightly.
- Mix granulated sugar and cinnamon in a shallow dish. Roll the warm churro bites in the cinnamon-sugar mixture until coated.
- Serve immediately with your favorite dips or toppings.
