Ingredients
Scale
- 1 cup sweet corn kernels (fresh or frozen)
- 1 cup all-purpose flour
- 1/2 cup grated cheddar cheese
- 1/4 cup finely chopped scallions or green onions
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon baking powder
- Salt and pepper to taste
- Oil for frying (vegetable or canola oil)
Instructions
- In a large mixing bowl, combine the flour, baking powder, salt, and pepper.
- In a separate bowl, whisk together eggs and milk.
- Gradually add the wet ingredients into the dry mixture, stirring until smooth.
- Fold in the sweet corn, grated cheese, and chopped scallions until evenly distributed.
- Heat about 1/4 inch of oil in a large skillet over medium-high heat until shimmering.
- Drop spoonfuls of batter into the hot oil, flattening slightly with the back of a spoon.
- Fry for about 2-3 minutes on each side or until golden brown and crispy.
- Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dips, garnished with additional cheese or herbs if desired.
Notes
- Ensure oil is hot enough before frying to prevent sticking and sogginess.
- For gluten-free, substitute all-purpose flour with gluten-free flour blend or almond flour.
- Fritters can be frozen before or after cooking; reheat in oven or air fryer for best crispiness.
- Add fresh herbs like parsley or cilantro for extra flavor.
