- 4 large sweet potatoes, peeled and diced
- 1 lb (450 g) Honey Garlic Sausage links or sliced sausage
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 3 tablespoons honey
- 1 teaspoon smoked paprika (optional)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon olive oil, salt, pepper, and smoked paprika if using. Spread on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and caramelized.
- While roasting, heat a large skillet over medium heat. Add the sausage links or slices and cook until browned on all sides, about 5-7 minutes.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Stir in honey and cook for another 2 minutes until the glaze thickens slightly.
- Add the roasted sweet potatoes to the skillet with the sausage. Toss everything to coat with the honey garlic glaze. Cook for 2-3 more minutes until heated through. Garnish with fresh parsley if desired.

- You can substitute the sausage with ground chicken, turkey, or plant-based alternatives.
- For extra flavor, toss the sweet potatoes with additional spices or herbs before roasting.
- Reheat leftovers in a skillet for best texture rather than microwave.
