  • 3 cloves garlic, minced
  • 3 tablespoons honey
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon olive oil, salt, pepper, and smoked paprika if using. Spread on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and caramelized.
  2. While roasting, heat a large skillet over medium heat. Add the sausage links or slices and cook until browned on all sides, about 5-7 minutes.
  3. In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Stir in honey and cook for another 2 minutes until the glaze thickens slightly.
  4. Add the roasted sweet potatoes to the skillet with the sausage. Toss everything to coat with the honey garlic glaze. Cook for 2-3 more minutes until heated through. Garnish with fresh parsley if desired.
