Instructions
- Start by peeling and dicing the sweet potatoes into uniform cubes to ensure even cooking. Set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausages and cook until browned on all sides, about 8-10 minutes. Remove the sausages from the skillet and slice them into bite-sized pieces, then set aside.
- In the same skillet, add another tablespoon of olive oil if needed. Toss in the diced sweet potatoes, smoked paprika, salt, and pepper. Cook over medium heat, stirring occasionally, until the sweet potatoes become tender and golden brown, approximately 10-12 minutes.
- Lower the heat. Add the minced garlic and cook for 1 minute until fragrant. Drizzle the honey over the sweet potatoes and sausages, stirring gently to coat everything evenly.
- Return the sliced sausages to the skillet. Toss everything together and cook for another 2-3 minutes to let the flavors meld. Garnish with fresh chopped parsley for a bright finish.
