- 1 pound ground turkey
- 2 large sweet potatoes, diced
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add onion and garlic, cook until fragrant.
- Add ground turkey, cook until browned. Season with paprika, thyme, salt, and pepper.
- Meanwhile, roast sweet potatoes in the oven for 20 minutes until tender.
- Combine cooked turkey mixture with roasted sweet potatoes. Transfer to a baking dish.
- Bake for 15 minutes until bubbling and golden.
- Garnish with fresh parsley before serving.
Notes
- You can add shredded cheese on top during the last 5 minutes of baking for a cheesy variation.
